AUTHENTIC ITALIAN RECIPES FROM RISTORANTE d'ANNAMARIA

Zucchini a "scapece" is a great way to do zucchini but may be a problem for some of you out there. Fresh mint- dried mint just won't do- it must be fresh. Ingredients for four people:
Zucchini squash 3 pounds Olive oil (extra virgin) 3/4 cup Frying oil (Wesson, etc.) as needed Garlic 4 large cloves Vinegar (red wine) to taste Mint (fresh) to taste Salt to taste
How to do it:
Wash the zucchini. Slice all the zucchini into 1/4 inch slices. In a large frying pan, add enough frying oil to make it two fingers deep in the bottom of the pan. Over medium high heat, fry the zucchini (you won't be able to do it all at once. Do it in a few batches) to a dark brown color. Drain zucchini on paper towels. Coarsely chop the garlic and toss it in a bowl with the fried zucchini. Add the vinegar, mint, and olive oil. (It should be a bit tart so don't go overboard with the vinegar. The mint should be easily discernible so use a good amount. Its hard to use too much mint.) Toss all the ingredients well. Salt to taste. |
