Veal cutlets (cotolette)are so simple that I'm almost embarrassed to include them, but they're just too good not to. Ingredients for four people:
Veal or beef cutlets 2 pounds Eggs (beaten) 2 Milk 1/2 cup Bread crumbs (seasoned or not) 2 cups Vegetable oil (frying) 2 or 3 cups Salt to taste
How to do it:
Mix the beaten eggs and milk together in a large shallow bowl. Add some salt to the bread crumbs, mix and place in a shallow pan. (a cake pan is perfect) Dip the cutlet into (both sides) the egg mixture, then Place it in the bread crumbs so that both sides are covered. Place the cutlet into a frying pan of hot oil (not smoking hot). Turn cutlet when first side is a delicate brown and fry until second side is the same color. Repeat process for all the cutlets. Serve with freshly squeezed lemon juice over them.
