Roast Beef
- The Naples way. This is a really interesting way to cook a piece of beef. The
term roast-beef is actually a misnomer because the beef is deep-fried.
Ingredients:
An eye-of-round roast
A tall pot large enough to hold the roast comfortably
Vegetable oil (enough to completely cover the beef)
Salt
How to do it:
Pour the oil
into the pot and heat it over medium-high heat until it is very hot but not
quite smoking.
On a piece of plastic wrap or aluminum foil sprinkle an abundant amount of salt
all over the beef.
Rub the salt into the beef.
Very, very carefully lower the salted beef into the hot oil and cook over
medium-high heat.
For rare beef, cook it for ten minutes.
Twenty minutes for medium well beef.
Again, very, very carefully remove the beef from the hot oil and place on a
paper towel.
Let it stand for ten minutes.
Slice thick or thin and serve.
Note:
Beef portions are generally figured at 8 ounces a portion so plan accordingly.
