Potato Salad Italian style is nothing like its American counter-part. "Try it - you'll like it."

Ingredients for four people:

Potatoes                                          2 pounds

Garlic                                             2 or three cloves

Olive oil (extra-virgin)                    3/4 cup

parsley (freshly chopped or dried)   1/8 cup

Salt                                                 to taste

 

How to do it:

 

Wash and peel the potatoes

Boil the potatoes until tender in a large pot so that the water completely covers the potatoes.

Drain the potatoes and let cool.

Chop the garlic into small pieces and toss with the potatoes and all other ingredients.

Eat at room temperature or refrigerator chilled.
