Pizzette fritte (Little fried pizzas) These little treats can be eaten as an antipasto or as “finger food” during a party.  They’re not terribly difficult to make and your guests won’t forget them.

 

Ingredients

 

Bread Flour                        14 ounces

Yeast                                  1 cake (.6 ounce)

Salt                                    as needed

Frying Oil                          as needed

 

How To Do It

 

In a large mixing bowl, dissolve completely the yeast in a ˝ cup of warm water.

Add two handfuls of flour to the water and yeast and mix well. 

Let this rise in a warm place for ˝ hour.

On a flat surface, make a mound with the remaining flour and dig out a small crater in the center.

Pour the flour and yeast mixture into the flour crater on your work surface along with a pinch of salt.

Start working the flour and yeast together little by little while adding a very small amount of  water at a time until you have a very soft dough.

Knead vigorously for at least 15 minutes and the dough no longer sticks to your work surface.

Divide the dough into 12 equal pieces and form into balls.

Let the dough balls rise in a warm place for a full hour on a floured cloth with a second cloth used as a cover.

When they’ve grown, flatten them down into disks about ˝ inch thick in the center and a tiny bit higher on the edges.

Deep-fry the pizzas in boiling oil and hold them under the surface with a spoon because they will grow and float.

Remove them from the oil and transfer them to absorbent paper.

Top with whatever you wish and eat them warm.

If you want a traditional type pizza, spread a couple of tablespoons of pizza sauce and some mozzarella on them and pop them into a very hot oven for a couple of minutes.    or

Try a Mexican pizza.
