PATATE ALLE MANDORLE (almond seasoned potatoes)
Ingredients for 4 persons:
potatoes (small - new) 20 almonds (blanched) 1 ounce salt to taste
How to do it:
Wash the potatoes without peeling them and cut them in half lengthwise. Grind the almonds in a blender leaving them coarsely ground. Place the potaotes on an ungreased cookie sheet round side (skin side) down and sprinkle a pinch of ground almonds over the top of each of them, one at a time. Put the potatoes in a very hot oven and let them cook for 15 minutes maximum or until they seem swelled and golden brown. Sprinkle salt over them, finish cooking until very tender. Let cool to warm and pop them in your mouth in one bite.
