Pane (Bread) What can we say about bread and the Italian cuisine. You can't have one without the other. Bread is probably the single-most important part of any Italian meal. There are however some widely ignored rules about when you should and should not eat bread during an Italian meal. If you go to a restaurant, bread will be placed on the table immediately (just like the US) and can be nibbled at while you're waiting for either a waiter or antipasto. If you order a "primo piatto (pasta and/or rice), the waiter will habitually remove the bread from the table unless otherwise instructed (50/50). Even Southern Italians try not to over-due the starch. When you get past the pasta and start the "secondo piatto" (check my recipes), the bread returns to the table and you can eat to your heart's content. Maybe "heart's content" is inappropriate in this case. All in all, Italians like their bread and are offered a variety of types. Making bread at home can be some work but the results are worth every bit of the extra effort. Once again, buon appetito. NOTE: To get a soft dough to keep its shape and not spread all over your baking sheet, you really should use a bread form.
