Mozzarella in carrozza (Italian style “French Toast”) Its not really French toast. The bread has been soaked in beaten egg and is fried in a pan but that’s where the resemblance ends. Give this one a try. Its good served as an antipasto before an Italian meal or its good as an American lunch. “Try it - you’ll like it.” Oh, by the way - you can use any kind of cheese you want for this recipe.
Ingredients for 4 sandwiches (2 to 4 persons)
Italian Bread (day old) 8 - ½ inch slices Mozarella (in a chunk) 1 pound Olive oil (extra virgin) as needed Eggs 4 large Flour ¼ cup Salt and black pepper to taste
How To Do It
Cut all the crust off the 8 slices of day-old Italian bread. Slice the mozzarella very thinly. Cover 4 of the bread slices with mozzarella in such a way as not let the cheese extend beyond the edge of the bread. Cover the mozzarella with the other 4 slices of bread. Place the flour on a flat plate. Taking each sandwich, one at a time, hold them so that the edges can’t separate, then stick the edges of each sandwich in the flour so that all of the edges are completely covered with flour. Now do the same thing with some cold water, wetting only the very edges of the sandwiches. This operation will inhibit the mozzarella from running out from the edges of the bread during cooking. Arrange the sandwiches on a very large and fairly deep plate. After beating the egg and adding salt and a little pepper, pour over the sandwiches on the plate. Let them soak in the egg for 5 minutes, then carefully turn them over and let them soak another 5 minutes. The sandwiches must soak up as much egg as possible. Fry the sandwiches in boiling olive oil, but don’t deep-fry them. About half a finger of oil should be more than enough. When the first side is a golden brown, carefully flip them over and fry the other side. Remove from the oil and transfer to absorbent paper. Serve right away - very warm.
