AUTHENTIC ITALIAN RECIPES FROM RISTORANTE d'ANNAMARIA

Gnocchi: This is the version without potatoes.
Ingredients for 4 persons: All purpose flour 2 ¼ pounds Boiling water 3 ½ cups Salt 1 ounce Your favorite sauce about 2 quarts Parmesan or Romano cheese (grated) 3 - 4 ounces
How To Do It: Place the flour in a large bowl and make a hole in the center with your fingers. Slowly pour in the water and add the salt. Start by stirring with a fork until its cool enough to knead by hand. Knead the dough until its elastic and very soft but, not sticky. Place your dough ball aside on a well floured surface. Cut a small piece off and roll it out into a rope about3/8 inch in diameter. Cut your dough rope into ¾ inch pieces and put them aside on a well floured surface. Repeat this procedure until all the dough is used. In a large pot cook your gnocchi in rapidly boiling water until they float. cook one more minute and drain. Cover with sauce and cheese and enjoy or cover with sauce and cheese and bake in the oven at 375º for about 30 minutes. Serve piping hot.
