GAMBERI IN AGRODOLCE (Southern Italian sweet and sour shrimp)

 

Ingredients for 4 persons:

 

Shrimp (large)                          16

Zucchini squash                        2

Golden Delicious apple              1

Extra virrgin olive oil                7 tablespoons

Apple cider vinegar                   3 ounces

Dill weed                                  to taste

Salt                                           to taste

Pepper                                      to taste

 

How to do it:

 

Wash and cut the 2 zucchini julienne style (into very thin little sticks).

Rinse them quickly under runnung water, peel them.

Peel the apple and slice it very thinly.

Put 4 tablespoons of olive oil in a skillet and place over medium high heat.

Place the shrimp and apple slices in the hot skillet and cook for 5 minutes.

During this 5 minute cooking period, add a little apple cider vinegar.

When the aple slices are soft, add the julienne cut zucchini, add salt to taste and let it all cook for about 15 minutes.

As soon as the 15 minutes are finished, remove the skillet from the heat and add the remaining olive oil and the dill weed. (Take it easy on the dill until you taste. You can always add more but you can’t take away.
