AUTHENTIC ITALIAN RECIPES FROM RISTORANTE d'ANNAMARIA

Fried (Sautéed) Mushrooms are probably not much different from the American recipes. Try them. The main difference would be, course, the types of "shrooms" you can find here.
Ingredients for four persons:
Mushrooms ±4 pounds The amount of mushrooms depends, of course, on the type and price of "shrooms" available. Most, if not all "shrooms" are about 75% water so once they're cooked down you don't seem to have much left. For this reason I would say to buy :-
Garlic 2 or 3 cloves Olive oil (extra-virgin) 3/4 cup onion 1 small Bullion (beef) 1 or 2 cubes Wine (white - not sweet) 4 or 5 ounces
How to do it:
Wash and slice the mushrooms. In a large frying pan, over medium heat, sauté the garlic in the olive oil. Add the mushrooms and cook them until all the water is boiled off. Add the onions and wine and continue cooking until, again, all the liquid has been cooked off. Cook another 10 minutes, stirring frequently. Salt to taste. Serve hot.
