AUTHENTIC ITALIAN RECIPES FROM RISTORANTE d'ANNAMARIA

Fried bell peppers are easy to make and great to eat. This is a favorite of the Naples area. You need a lot, though, because they cook down so much. Ingredients: for four persons:
Bell Peppers (mixed-green, yellow, red) 3 pounds Olive oil (extra virgin) 1 cup Garlic (fresh) 4 cloves Gaeta olives 1 cup Salt to taste
How to do it:
Slice the peppers into 1/4 inch strips. Wash pepper strips to clean and remove all seeds. In a large frying, over medium-high heat, sauté the garlic in the olive oil until it is tender and light brown in color. Add the peppers and olives and cover. Stir every couple of minutes being sure to bring the slices that are underneath to the top. (in this way the ones underneath won't burn) When they have cooked down sufficiently to be able to handle easily and are about half done remove the lid and keep it off so that the peppers can fry and not be steam cooked. Cook until the peppers are very tender. Serve hot
Note:
Gaeta olives are the ones that are kind of reddish black when raw - black when cooked and are optional to this recipe.
