Coffee
Liqueur
is included here
because it is a delicious liquore, but also because Mediterranean Italians love
to be able to inform their guests that what they are being served is "fatta in
casa" or home-made. It gives your special occasion something just a little bit
more special.
Ingredients:
Espresso coffee beans (very finely ground): 4 ounces
Water:
9 ounces
Alcohol (pure grain/90%): 9 ounces
Sugar (white/pure cane): 12.5 ounces
Water (again): 9
ounces
Vanilla (fresh stick): 9
ounces
How to do it:
Into a sealable glass container, pour the alcohol, one 250 gram portion of
water, and the finely ground coffee. Hermetically seal the container and let
this compost rest for 8 to 10 days.
Open the container and very carefully filter the liquid into another clean, dry,
and sealable glass container ( be sure to remove all of the sediment; a coffee
filter is excellent).
To the coffee and alcohol mixture, add the syrup prepared by combining the sugar
and vanilla to the second 250 gram portion of water, letting them come to a boil
in a small sauce pan, stirring until completely dissolved and cooled to room
temperature.
Mix the syrup and coffee mixture completely, hermetically seal the container,
and let the coffee liqueur rest for about one month.
Some people prefer drinking the liqueur hot with a touch of anice or sambuca
added. Others like it just as it comes from the bottle. However you try it -
enjoy.
