Bran Bread (whole wheat or pane integrale)

Ingredients for 1 loaf:

Bran (wheat and/or oat)                3 pounds

Bread flour                                  10 ounces

Yeast                                           1/2 cube (3/4 ounce)

Margarine                                    10 ounces

Sugar                                           2 ounces

Milk                                            as needed

Salt                                              as needed

 

How to do it:

 

Mix the flour with the bran, the sugar, and a pinch of salt very well together.

With the flour mixture, make a mound with a crater in the center resembling a volcano.

Melt the yeast in a very small amount (1/4 to 1/2 cup) of very warm water and add it to the flour along with the margarine.

Adding a little milk at a time (milk should be room temperature, not cold) work the dough until all ingredients are well mixed and the dough is compact.

Form your loaf and place it on a baking sheet.

Preheat your oven to 450º for 30 minutes then reduce heat to 350º and bake another 30 minutes.

Remove from oven.
