BRACIOLE DI MAIALE AL VINO BIANCO (ROLLED PORK FILLET IN WHITE WINE)

This is a slight variation on the traditional bracciole. I thought you would like it, I do.

 

Ingredients for three persons:

braciole di maiale (pork fillets - about 6 inches in diameter)     6

minced garlic1                                                                     1 clove

extra virgin olive oil                                                             4 tablespoons

rosemary (freshh or dried) fresh is better                                 as much or little as you like

beef broth (homemade or canned or bouillion)                          1 ladle full

white wine                                                                           2 fingers from the bottle

salt                                                                                      to taste

 

How to do it:

Lay one of the fillets out flat on a work surface.

Season it with a sprinkling of the garlic and rosemary.

Role the fillet up completely and hold it together with a couple of toothpicks.

Repeat the process for all of the fillets

Sautee the fillets in a frying that you have heated the olive oil in.

Add the white and reheat.

Add the broth, cover the frying pan and turn off the flame under the pan.

Serve warm.
