ARROSTO ALLA SALVIA (Roasted sage pork)
Ingredients for 4 persons:
Pork loin roast (not too lean) 2 pounds Sage (fresh or dried) if fresh - 6 leaves if dried - 2 teaspoons Garlic (fresh) 2 cloves Extra vergin olive oil 10 tablespoons salt and pepper to taste
How to do it:
Tie the roast up for cooking with culinary string.
Note: If you don’t know how to tie a roast, have your butcher or one of the butchers at the super market do it for you. Its usually free and just takes a minute. If you can avoid it, don’t use an elasticized net. They can really be a nuisance to get off. Peel the garlic and mince it. Mix the minced garlic together with about ateaspoon of salt and a teaspoon of pepper. With a very sharp and pointed knife, pierce the roast all over and insert a bit of the garlic, salt, and pepper mixture and a bit of sage into each of the holes with a finger. Place the seasoned roast along with the olive oil and some more sage in a roasting pan and put it in a 450º oven for 15 minutes or until the roast starts to brown. Reduce the oven heat to 350º and continue cooking for about an hour, basting often with the juice from the roast. Remove from the oven when the juice from inside the pork roast is no longer pink but clear in color. Let the roast cool for ten minutes before slicing and serving. Excellent with mashed potatoes.
